noma 2.0 opens
It finally happened. René Redzepi's long-awaited successor opened its doors on 15 February and the new version of world-renowned restaurant Noma has some new concepts. The menu will more closely reflect seasonal produce and has been divided into three seasons. Fish and shellfish are the focus in winter, while plants are the main items on the menu in spring and summer, with the spotlight on game and forest fruits in the fall. Redzepi's team will even be growing many of the vegetables themselves at the restaurant's rooftop urban farm. Noma 2.0 is open Wednesday-Saturday and can accommodate 40 guests for both lunch and dinner. Despite the standard cover price of DKr2,250 excluding wine, tickets for the restaurant's first season of fish and shellfish have already sold out - the next season opens in May.

Michelin stars for Vejle and Gentofte
The Michelin Guide Nordic recently awarded the Michelin stars for this year and all the Danish restaurants retained the stars they achieved last year. There were even three new ones. One of those went to Kadeau in Copenhagen, which already had one star and now boasts two, putting it on a par with restaurants AOC and Henne Kirkeby Kro. The other two new stars went to Jordnær in Gentofte in the Copenhagen area and to MeMu in Vejle, Jutland. MeMu's Michelin star is the first in the Vejle region and achieving stars has been the restaurant's ambition from the outset. "We've worked really hard for this and we've been in business for many years, so it's a huge relief," Mette Darnau, one half of the couple behind MeMu, told Politiken. We predict a busy year for the restaurant in Vejle. Denmark now has 31 Michelin stars spread across 26 restaurants, one of them on the Faroe Islands. The sole top scorer, with 3 stars, is still Geranium in Copenhagen, which is run by Rasmus Kofoed.

Hahnemanns Køkken opens
TV chef, food writer, canteen queen and cookbook author Trine Hahnemann is a master of healthy and delicious everyday home cooking. In Hahnemanns Køkken she has created a food emporium where you can buy freshly made meals and salads, convenience food to take home, delicious pastries and good coffee.Inside the large, bright premises you'll also find Hahnemann's cookbooks in Danish and English, as well as delicacies such as choice wines, cheeses and homemade pickles at affordable prices. Hahnemanns Køkken also has a cookery school and an events area and will be organizing regular pop-up events where talented chefs conjure up something special. The first will be a sumptuous cake table pop-up in March.
